giffgaff works fine in Spain - I've just come back from Barcelona, and calls and texts were OK. I didn't use data because it's so expensive (and there's no price-shock protection with giffgaff either).
Note that goodybags and gigabags don't work outside the UK, so the prices will be those at http://giffgaff.com/index/pricing for roaming in the EU. You also don't get free giffgaff-to-giffgaff calls (people calling you won't pay anything, but you'll pay to receive and make all your calls).
If you're intending to live in Spain, it'll definitely be cheaper for you to get a local SIM from one of Spain's operators.

Yes of course you can use your GG in spain but the goodybags will not be active there and the costs will be as follows:
