I have been veggie for about 25ish years and over that time have tried many different ways to make meat free meals . I used soya mince for many years but recently have been avoiding it as I have thyroid problems and I’ve read it’s not good for me to have it so I’ve been experimenting with other things. To get to the point lol I’d like to share a tip . I now use mushrooms, I put them in a blender and whizz til mince size pieces then do the same with onion , a root veg like carrot , swede etc . I fry all together then add canned pulses ( haricot ,borlotti etc ) and walnuts that have been through the blender - for protein. Finally I add gravy and a squirt of tomato purée. It works for me and by tweaking the flavours I make lasagna, curry and all sorts of meals with it . Hope you give it a try .
