So I wanna start using my phone to tether internet to my laptop while I'm at work but at 1gb I'm guessing it will run out pretty fast right?

I know downloads are a no-no if I want it to last, what about youtube videos tho?

It will still not last a whole month. Try using the Mobile version of the website to reduce the usage.
Opera Mobile uses less data I have found.

Depending on the web sites you visit, it can ring up large amount of data flow as some site have heavy flash contents and/or the "hidden" activities that a web site induce on your PC.

If you plan to use it for tehtering i'd tunr everything off.

Such as automatic updates,
AV updates and other software updates

Try and reduce whats downloading in the background as that will soon eat up the 1gb, turn them back on when your not tethered.

Also avoid streaming and maybe consider some for of ad blocker as they may also save data by stopping downloading adverts

One of the big problems I found before moving to giffgaff was that my smartphone was literally eating into my data, so after about 7 or 8 days my data had diminished.

That was just from using a smartphone, if you're planning on using web versions of pages then you might find it won't last all that long. Web pages take up a lot more data than mobile versions of websites, that's the idea behind them.

So unfortunately, from my personal experience with just smartphone usage, anything like radio streaming, downloads, YouTube and so on and so forth, your data will be eaten within days.
