I want to stop ALL traffic in or out from my apps

How do I do this?

Is there a program that let's me add exceptions? Like  I could allow some apps without restriction and others only if I permit each and every time?

Thanks

Typically, go into 'Settings', scroll down to 'Apps' where you will find he preinstalled and those you have downloaded.  Tap any of the apps and you should see 'Permissions'.  There you will see the default permissions.  Some apps will demand the full set, but there is no reason for a torch app to have access to, for example, your contacts or phone.  You can switch these off.

You can't stop all traffic, but there are apps that don't need the full range of permissions and these can be switche off to prevent them running in the background.
