Hi I bought  my first goody bag by voucher when I purchased the phone

 Is it safe to pay by debit card next time? Will giffgaff then presume I want to renew each month and just take ten pounds each time, even if I do not want to renew after this?

Yes it's safe, along as you don't tick the recurring goodybag your all good. However, if you accidentally setup a recurring goodybag you can simply remove the card details under the payment details page here http://www.giffgaff.com/profile/payment-details

You Just need to make sure that you havent set your goodybag to recur, or automatically top up and you can check using the link below

@rober66942  If you have a recurring goodybag or auto top up enabled on your account, giffgaff will try to get the money from a payment card. Vouchers cannot be used for these kind of payments. If you wish to purchase goodybags or credit using vouchers instead of payments from your debit card, you can always disable recurring goodbyags and auto top up at https://giffgaff.com/profile/payment-details
